The colour is ruby-violet red almost impenetrable. The bouquet is clean, rich and very intense with spicy and balsamic nuances. The mouthfeel is amazing for the modulation between power and elegance.

FOOD PAIRING

It is a perfect wine to pair with red meat or game and hard cheese. You should get involved in this taste experience by sipping the wine in a burgundy type glass, to fully enhance these intense flavours and stimulate the palate.

VINIFICATION

After pressing and destemming, the fermentation begins. The entire maceration process takes place in concrete tanks at temperatures between 22 and 24 degrees without adding selected yeasts and sulphur dioxide. The racking takes place at the end of the sugar transformation process, which lasts from 12 to 18 days, to allow the maximum expression of the varietal aspect. The spontaneous malolactic fermentation and the final aging take place in steel tanks.

MONTE MASSA VINEYARDS

In this small and unique Terroir, an elegant and noble wine is born. Monte Massa, 300 meters above the sea level, located between the first hills of the Apennines, offers a 360-degree view of the surrounding area reaching as far as the sea. Immersed in the quiet, the "Monte" had been elected a place of considerable fertility since Roman times, suitable for hosting large expanses of vineyards and olive groves that follow one another relentlessly along the hilly surface. The soil, deriving from a substantially clayey substrate, has sequences of rocks consisting mainly of calcium carbonate. On average deep and easily explored, it is a source of well-being for the vine, which translates into slow and prolonged ripening with intact grapes thanks also to constant and dry ventilation.
