THE WINE
The drying of the grapes as a tool to enhance the characteristics of the company's singular wines. Classic ruby red, intense, dense, veiled. The aroma is noble: noble nose, which is almost a synthesis of ancient and modern: ancient in the intransigence of Pinot Noir to be blended with certain varieties; modern in the fruit, a still very lively cherry, as the colour of the wine already suggests. Wild undergrowth. Camphor. Vanilla. It is a wine with an expanding personality. The palate has the juiciness of ripe fruit, the gentleness of time, elegant with a great balance between softness and acidity. It is only produced in important years.
FOOD PAIRING
You should pair this wine with feathered game with long cooking time, or with braised beef and hard Fossa cheese. As a dessert it is ideal with cheese, honey and dried fruit.
