TRAINING SYSTEM
Spurred cordon. Manual harvest, in two different periods, selecting the finest grapes.
VINIFICATION
The maceration on the lees takes place for 24 hours followed by soft pressing of the crushed but not destemmed grapes, followed by a white vinification process with the use of low sulphur content.
The fermentation takes place at 16 degrees in order to allow the fruit to be preserved.

In steel tanks and bottle for 8 months
FOOD PAIRING
It is a perfect wine to pair with raw fish and shellfish. You can also drink this wine with seafood Spaghetti with smoked tomato, but also with cold cuts and “piadina romagnola”.
